Adele

Many of us miss Adele Majewski and her smiling face. Adele could always be counted on for a word of encouragement or praise. She was a friend to all who knew her. In February, Adele took her smile and friendly ways to heaven where they are sure to be welcomed. The one thing Adele didn’t take was her Pineapple Squares – a little bit of sweet sunshine here on earth. But that’s OK because she also left the recipe for all of us to enjoy. Take a bite and remember her sunshiny, smiling face and kind words.

Adele Majewski’s Pineapple Squares

Filling Ingredients: Crust Ingredients:
2 15 oz. Cans Crushed Pineapple 1 Cup Sugar
5 Tablespoons Corn Starch 1 lb. Margarine
1 Cup Sugar 4 ½ Cups Flour
1 Egg
1 teaspoon Vanilla

Make the filling first. Combine filling ingredients in a saucepan and cook until think. Let cool. Combine the sugar, margarine and flour and mix as for a pie crust. Add the egg and vanilla. Set aside ½ cup or more of this mixture and add enough flour to it until crumbly. Press remaining dough mixture into an ungreased cookie sheet (12” x 18” pan, 1” deep). Cover with cooled pineapple filling. Sprinkle reserved crumb mixture over the top. Bake at 350° for 45 minutes. Enjoy!
